Cleaning fish with an electric knife, Step 3

Make last cut to remove the ribs and any belly fat (where any contaminants are).
What a nice filet.
By keeping the skin below during this step, your cutting board will last longer.
Discard ribs and belly fat.
If this can be done with perch, walleye being bigger are even easier.

Put skin back in place and flip fish over and repeat.
